Green Bean and Leek Gratin

Ingredients

  • 600g green beans
  • 2 leeks
  • 1 garlic clove
  • flour
  • 1/2 cup milk
  • 1 cup dry white wine
  • grated Grana Padano cheese
  • butter
  • extra virgin olive oil
  • salt
  • black pepper

Preparation

  1. Start by trimming the green beans and removing the ends, then wash them and boil in plenty of salted water for about ten minutes before draining and letting them cool slightly.

  2. In a large saucepan, heat 2 tablespoons of oil with the peeled garlic clove and leeks cut into slices, let the leeks soften, add a level tablespoon of flour, mix well, and remove the garlic when it is golden.

  3. Pour in the milk, salt, and pepper, then mix well, add the green beans after a few seconds, pour in the wine, cover, and let stew for about ten minutes or until the liquid is almost completely absorbed and turned into a cream.

  4. Remove from heat, transfer the green beans to a buttered baking dish, sprinkle with plenty of grated cheese, distribute some butter flakes on the surface, and bake in a preheated oven at 180°C until gratinated.

  5. Remove from the oven and let the gratinated green beans rest for about ten minutes before serving in the same cooking vessel.
