Homemade Falafel for Babies and Family
Ingredients
- 1 can chickpeas, drained
- 4 cloves garlic
- 2 shallots
- 1 tsp ground coriander
- 1 tsp ground cumin
- small bunch fresh parsley
- 2 tbsp plain flour
- fresh black pepper
- olive oil
Preparation
Preheat the oven to 200ºC/Fan 180ºC.
Add the chickpeas, garlic, shallot, coriander, cumin, parsley, flour and black pepper to a food processor and blend until you have a thick paste texture. Add a drizzle of olive oil to loosen if needed.
Shape the mixture into small balls the size of walnuts.
Heat a shallow frying pan with a drizzle of olive oil on a medium heat and add the falafel balls. Fry the falafel until golden, turning frequently and being careful not to burn them.
Remove from heat and transfer the falafel to an oven proof dish. Warm through in the oven for 10-15 minutes.
Allow to cool and serve in a pita with lettuce, tomatoes, olives, cucumber, and a drizzle of yogurt with chopped mint and lemon.
