Herby Harissa Falafel with Veggie Additions

Ingredients

  • 1 x 400g can of chickpeas
  • 1 small red onion
  • 1 clove garlic
  • 10g fresh parsley
  • 10g fresh coriander
  • 1 tbsp rose harissa
  • 1 tsp ground cumin
  • 50g gram flour
  • Juice of half a lemon

Preparation

  1. Put all ingredients into a food processor and blitz into a thick paste. Wet your hands to prevent sticking and roll into ping pong ball-sized balls.

  2. Heat a non-stick frying pan on medium to high heat, add a good drizzle of oil, and fry the falafel balls for 4 minutes, turning and flipping until golden and cooked all over.
