Baked Spinach Falafels

Ingredients

  • 1 can chickpeas, drained
  • 100g fresh baby spinach, chopped
  • 25g fresh parsley, chopped
  • 2 tbsp lemon juice
  • 1 small onion, roughly chopped
  • 2 garlic cloves, roughly chopped
  • 1 tsp ground cumin
  • 1/4 tsp black pepper

Preparation

  1. Preheat oven to 200c/fan 180c and line a baking tray with non stick baking paper

  2. Add all falafel ingredients to a food processor and pulse until they turn into a fine dough mixture

  3. Make a bunch of ping pong sized balls from the mixture, place on the baking tray and flatten them a little into patties

  4. Bake for 25-30 minutes until browned and crispy, turning halfway through
