Homemade Turkish Beyti Kebab

Ingredients

Dough

  • 7.5 cups flour
  • 2.5 cups water
  • 1 teaspoon salt

Meatballs

  • 750 grams ground beef
  • 1 onion
  • 2 cloves garlic
  • 1 cup water
  • 5 tablespoons bread crumbs
  • 1 egg
  • Salt, black pepper, cumin, and red pepper flakes

Sauce

  • 1 tablespoon tomato paste
  • 2 bell peppers
  • 4 chili peppers
  • 3 chili peppers
  • 2 sprigs rosemary
  • 4 tomatoes
  • 2 tablespoons ketchup
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • 1 teaspoon red pepper powder
  • 1 cup water

Preparation

Meatballs

  1. Grate the onion and garlic.

  2. Combine all meatball ingredients and knead.

  3. Refrigerate for 1 hour.

Dough

  1. Knead all dough ingredients together.

  2. Let the dough rest covered for 30 minutes.

  3. Divide into portions and roll out with a rolling pin.

  4. Cook the dough on a hot pan.

  5. Store in a bag to prevent drying.

Sauce

  1. Sauté the tomato paste in oil.

  2. Add the remaining sauce ingredients.

  3. Cook until thickened, then blend into a sauce.

  4. Store in a jar in the refrigerator if desired.

Assembly

  1. Trim the corners of the cooked dough sheets.

  2. Place a strip of the meat mixture in the center and roll up.

  3. Seal the edges with water to keep closed.

  4. Bake at 180°C for 30-35 minutes.

  5. Top with sauce and serve.
