Mushroom Ricotta and Thyme Tart

Ingredients

  • Vegan Puff Pastry
  • Chanterelle Mushrooms
  • Vegan Ricotta
  • Thyme
  • Tarragon
  • Vegan Butter
  • Salt and Pepper

Preparation

  1. Preheat the oven to 400°F.

  2. Roll out the vegan puff pastry and place it on a baking sheet.

  3. In a skillet, sauté the chanterelle mushrooms in vegan butter with thyme and tarragon until softened.

  4. Mix the sautéed mushrooms with vegan ricotta and season with salt and pepper.

  5. Spread the mixture evenly over the pastry.

  6. Bake for 20-25 minutes or until the pastry is golden and crispy.

  7. Optionally, add fresh greens on top before serving.
