Ocean Blue Meringue Buttercream Cupcakes
Ingredients
- 1 1/4 cups all purpose flour
- 2 tbsp cornstarch
- 1 tsp baking powder
- 1/2 tsp baking soda
- 3/4 cup powdered sugar sifted
- 1 cup unsweetened soy milk, room temp
- 1/3 cup coconut oil
- 1 tbsp white vinegar
- 2 tsp vanilla bean extract
- 1/4 rose salt
- ingredients for vegan american meringue buttercream:
- 225 g vegan butter, room temp
- 2 1/2 cups powdered sugar
- 1 tsp vanilla extract
- about 1/4 cup aquafaba, room temp
- 1 tsp unicorn superfoods ocean blend
Preparation
Preheat oven to 170c. Prepare muffin pans w liners. Set aside
In a large bowl, sift dry ingredients & whisk to combine. Add in milk, vanilla, coconut oil, white vinegar, till well combined. Divide batter evenly between 8 cupcake liners. Bake for 20 mins or till toothpick comes out clean. Let cool before frosting
Method for the Frosting
Cream butter on low speed in large bowl till lighter in colour & smooth
Add all powdered sugar & mix on low speed till incorporated
Add in vanilla & aquafaba (mix on medium high for 5 mins)
Add unicorn superfoods ocean blend powder & mix on low speed for another 5 mins to get rid of bubbles
