Rocky Road Cake

Ingredients

  • 70g margarine
  • 180g caster sugar
  • 1 and 1/2 tbsp black treacle
  • 1 and 1/2 tbsp golden syrup
  • 225g self raising flour
  • 100g dark chocolate, melted
  • 4 tsp apple cider vinegar
  • 4 and 1/2 tsp baking powder
  • 3 tbsp cocoa powder
  • 150ml plant milk
  • 300g dark chocolate, melted
  • 175g biscuits
  • 125g glacé cherries, chopped
  • 100-125g vegan marshmallows

Preparation

  1. First you need to start making the cake. Preheat the oven to 180 degrees and then grease and line a deep cake tin. Cut an extra piece of baking paper, the size of the cake tin base and set aside

  2. Cream the margarine and sugar together in a mixing bowl

  3. Add the treacle, golden syrup, dark chocolate to the bowl and mix together

  4. Add all the remaining ingredients and mix together. It may be easier for you to gradually add the flour and liquid if your mixing bowl is quite small

  5. Pour into a cake tin and put in the oven for 35-45 minutes or until a skewer comes out clean

  6. Once the cake is cool, make the rocky road. Crush the biscuits, chop the glacé cherries into halves, add the marshmallows and pour in the melted chocolate. Mix together.(You can easily change any of the quantities of the rocky road to suit your needs!)

  7. Spoon the rocky road mixture on top of the cake, try and spread the mixture out

  8. Get that spare piece of baking paper, lay it on top of the cake and then use that to press the rocky road down so you can get a nice even layer. Leave to set for a few hours and then sprinkle with some icing sugar
