Spiced Vegan Parkin Loaf Cake

Ingredients

  • 110g margarine
  • 80g golden syrup
  • 110g treacle
  • 110g brown sugar
  • 150g self raising flour
  • 60g oats
  • 2 tsp baking powder
  • 1 and 1/2 tsp ginger
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 chia egg (1 tbsp chia seeds and 2 tbsp water)
  • 120ml plant milk (I used unsweetened soya)
  • 20g crystallised or stem ginger (optional)

Preparation

  1. Preheat the oven to 180 degrees. Grease and line a loaf tin.

  2. Add the sugar, golden syrup, treacle and margarine to a pan. Turn the hob on to a low-medium heat and slowly melt until all the ingredients have turned into a smooth liquid. Then take the hob off the heat.

  3. Add the flour, baking powder, oats, ginger, cinnamon, nutmeg, chia egg and plant milk to the pan. Mix together until all the ingredients are combined. If the mixture is too thick, add a splash more milk.

  4. Optional, stir in the chopped stem ginger.

  5. Pour the cake mixture into the loaf tin. Pop in the oven for 40 to 45 minutes or until a skewer comes out clean.
