A Pumpkin Spice Cake

Ingredients

  • 1/2 cup margarine
  • 1 and 3/4 cup sugar
  • 2 and 1/2 cup self raising flour
  • 1 tsp baking powder
  • 1 tbsp black treacle
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • 1 tsp nutmeg
  • 1 cup pumpkin
  • 1 and 1/2 cups plant milk
  • 1 tbsp apple cider vinegar
  • optional) 1 cup sultanas .
  • cinnamon frosting
  • 1/4 cup margarine (i used the pure brand)
  • 1 and 1/2 cups icing sugar
  • 1 tsp cinnamon
  • 1 tsp golden syrup
  • 2-3 tsp plant milk

Preparation

  1. Add the margarine and sugar to the bowl and cream together

  2. Add all the remaining ingredients (apart from the sultanas), making sure to add the vinegar last. Mix together

  3. If you are adding sultanas to the cake, mix them in now

  4. Grease and line a baking tin. Spoon the batter in

  5. Pop in the oven at 180 degrees. If you are making one large slab of cake, cook for 40-45 minutes or until a skewer comes out clean. If you are making a layer cake, cook for 20-25 minutes

  6. Whilst the cake is cooking, whisk all the ingredients together for the icing and then put in the fridge

  7. Once the cake is cool, smother with icing
