Vegan Pumpkin Spice Loaf Cake

Ingredients

  • 1 and 1/2 cups of pumpkin purée (made from the stringy bits of a pumpkin)
  • 2/3 cup caster sugar
  • 1/2 cup margarine
  • 2 teaspoons vanilla extract
  • 2 cups self-raising flour
  • 1 tsp baking powder
  • 1 tsp apple cider vinegar
  • 2 tsp cinnamon powder
  • 1 tsp mixed spice
  • 1/2 tsp nutmeg

Icing ingredients

  • 2 cups icing sugar
  • 1/2 cup margarine
  • 1 tsp vanilla extract
  • 1/2 to 1 tsp cinnamon (adjust according to taste)

Preparation

  1. In a bowl, cream together the margarine and caster sugar.

  2. Add the pumpkin purée and mix well.

  3. Add all the remaining ingredients to the bowl and mix together. If the mixture is too thick, add a splash of plant milk and incorporate.

  4. Grease and line a loaf tin, then pour the pumpkin cake mixture into it. Bake in the oven at 180 degrees Celsius for 35-45 minutes or until a skewer inserted into the center comes out clean.

  5. While the cake is cooling, prepare the icing. In a bowl, whisk together the icing sugar, margarine, vanilla extract, and cinnamon. If needed, add a splash of milk to achieve the desired consistency. Place the bowl in the fridge.

  6. Once the cake has cooled, spread the prepared icing on top.
