Lemon Drizzle Cake

Ingredients

  • 150g margarine
  • 175g caster sugar
  • 2 tsp baking powder
  • 250g self raising flour
  • 150ml plant milk
  • 5 lemons
  • 4 tbsp granulated sugar

Preparation

  1. Preheat the oven to 180 degrees

  2. Add the margarine and caster sugar to a mixing bowl and cream together

  3. Add the baking powder, self raising flour and milk to the bowl and mix

  4. Grate three of the lemons and squeeze the same three lemons. Add the zest and juice to the mixing bowl and stir in

  5. Grease and line a loaf tin and then pour the cake mixture in. Bake in the oven for 40-45 minutes or until a skewer comes out clean

  6. Once the cake is out of the oven, squeeze the remaining two lemons into a bowl. Add the granulated sugar to the juice and mix until the sugar has dissolved. After five minutes of the cake being out of the oven, poke the cake with a skewer several times and spoon over the juice
