Chocolate Banana Bread Recipe

Ingredients

  • 3 large bananas or 4 medium/small bananas
  • 2/3 cup caster sugar
  • 1/2 cup margarine
  • 2 teaspoons vanilla extract
  • 1 and 1/2 cups self raising flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp mixed spice
  • 1 tsp cinnamon
  • 80g dark chocolate
  • (Optional) 50g dark chocolate chunks (just chop a bar of dark chocolate up)

Preparation

  1. Preheat the oven to 180 degrees. Grease and line a loaf tin

  2. Peel the bananas and add to a mixing bowl. Using the back of a fork, mash the bananas

  3. Add the sugar and margarine to the bowl and whisk until all the ingredients are combined

  4. In the microwave or a pan, melt the 80g dark chocolate. Once melted, pour the chocolate into the mixing bowl and then mix into the ingredients

  5. Add the vanilla extract, self-raising flour, cocoa powder, mixed spice and cinnamon to the pan. Whisk all the ingredients together until combined

  6. Optional- add in the chocolate chunks and fold into the mixture

  7. Scoop the cake mixture into the lined loaf tin. Flatten the mixture with the back of your spoon. Pop in the oven for 40-50 minutes or until a skewer comes out clean. (My banana bread took 50 minutes and the skewer was not coming out as clean in some places)
