Salted Caramel Apple Oatmeal Cookies

Ingredients

  • 2 cups all-purpose flour (or gluten free flour)
  • 1 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup (2 sticks) vegan butter, softened
  • 1 cup white sugar
  • 1 cup brown sugar, packed
  • 2 flax eggs
  • 1 tsp vanilla extract
  • 3 cups old fashion oats (or gluten free rolled oats)
  • 2 cups green apples, diced
  • 1/3 cup vegan salted caramel

Preparation

  1. Preheat the oven to 350°F and line two baking trays with parchment.

  2. In a mixing bowl, add all dry ingredients and mix to combine.

  3. In another bowl, add butter and both sugars, beat until light and fluffy, then add flax eggs and vanilla and beat until just combined, and finally add the dry mixture and beat until combined.

  4. Add oats and incorporate using a wooden spoon, then add diced apples and fold them in, scoop the dough onto the baking trays, and use a squeeze bottle to squeeze salted caramel into the cookies in different spots.

  5. Bake for 20-22 minutes or until golden brown, let cool, and serve, and optionally squeeze more caramel on the cookies before serving.

Notes

  1. This recipe is dairy-free and egg-free, making it vegan, and it can be easily adapted to be gluten-free by using gluten-free flour and oats.
