Spiced Turkey Meatballs

Ingredients

  • 500g minced turkey
  • 1 courgette, grated
  • 2 garlic cloves, crushed
  • 1 tsp ground cumin
  • 1 egg, beaten
  • 2 tbsp chopped mint
  • 2 tbsp chopped coriander

Preparation

  1. Reheat the oven to fan 200ºC/fan 180ºC. In a large bowl mix together all the ingredients using your hands, then roll into meatballs

  2. Add a glug of oil to a non stick pan on a medium heat and cook the meatballs for 5 minutes until golden brown (do this in batches if you have a small pan)

  3. Transfer the meatballs to a lined baking tray and bake for 8-10 minutes until fully cooked through. Serve with a classic tomato sauce and spaghetti or carb of choice
