Spiced Turkey Meatballs
Ingredients
- 500g minced turkey
- 1 courgette, grated
- 2 garlic cloves, crushed
- 1 tsp ground cumin
- 1 egg, beaten
- 2 tbsp chopped mint
- 2 tbsp chopped coriander
Preparation
Reheat the oven to fan 200ºC/fan 180ºC. In a large bowl mix together all the ingredients using your hands, then roll into meatballs
Add a glug of oil to a non stick pan on a medium heat and cook the meatballs for 5 minutes until golden brown (do this in batches if you have a small pan)
Transfer the meatballs to a lined baking tray and bake for 8-10 minutes until fully cooked through. Serve with a classic tomato sauce and spaghetti or carb of choice
