Scrumptious Baked Sweet Potatoes

Ingredients

  • sweet potatoes
  • 1-15oz can chickpeas
  • 3 very ripe avocados
  • juice 1 lime
  • 2 finely grated garlic cloves

Preparation

  1. Bake your sweet potatoes.⁠

  2. Drain and rinse 1-15oz can chickpeas. Toss chickpeas in a little olive oil before adding the spice (optional).⁠

  3. Rub chickpeas with a generous amount of tandoori masala seasoning, or substitute with other spices/herbs like smoked paprika, ancho chilli, chipotle, cayenne, garlic powder, cumin, chilli powder, turmeric and make your own combo. Add salt to taste.⁠

  4. Roast at 400F until crispy (about 20 minutes).⁠

  5. Once your sweet potato is cooked to your liking, slice open and use a fork to remove a little of the centre of your 3 baked sweet potatoes, then load with chickpeas

  6. To make easy guacamole:⁠

  7. Mix together 3 very ripe avocados (mashed), juice 1 lime, 2 finely grated garlic cloves, and add salt to taste. ?⁠

  8. Add dollop of guacamole to top of your chickpeas and add a drizzle of tahini and red chilli flakes

  9. Smoked paprika, ancho chilli, chipotle, cayenne, garlic powder, cumin, chilli powder, turmeric
