Vegan Stuffed Sweet Potatoes
Ingredients
- 2 sweet potatoes, sliced lengthways
- steamed kale
- steamed broccoli
- crispy chickpeas
- avocado
- tahini
- red chilli flake
Preparation
Roast your sweet potatoes face up on a parchment lined baking sheet at 400° for 40 mins
Remove from oven and slice down the middle
Stuff with your veggies and chickpeas. Drizzle with tahini and top with sliced avocado and red chilli flakes
