Vegan Stuffed Sweet Potatoes

Ingredients

  • 2 sweet potatoes, sliced lengthways ⁣
  • steamed kale⁣
  • steamed broccoli⁣
  • crispy chickpeas⁣
  • avocado ⁣
  • tahini⁣
  • red chilli flake⁣

Preparation

  1. Roast your sweet potatoes face up on a parchment lined baking sheet at 400° for 40 mins

  2. Remove from oven and slice down the middle

  3. Stuff with your veggies and chickpeas. Drizzle with tahini and top with sliced avocado and red chilli flakes
