Healthy Edamame Balls with Herbs and Spices
Ingredients
- 2 cups frozen edamame
- 1/2 red onion
- 2 garlic cloves
- Handful of chives
- Handful of mint
- 1 tsp ground coriander
- 1 tsp ground cumin
Preparation
Steam the edamame for 10 minutes until soft and preheat the oven to 180 degrees.
Add all of the ingredients including the edamame to a food processor and pulse until combined.
Roll into golf ball sized balls and cook for 25-30 minutes.
Serving suggestions
Serve with fresh kale and spinach, blueberries, capsicum, and cucumber.
Add a simple dressing made from honey, whole grain mustard, and lemon juice.
