Healthy Edamame Balls with Herbs and Spices

Ingredients

  • 2 cups frozen edamame
  • 1/2 red onion
  • 2 garlic cloves
  • Handful of chives
  • Handful of mint
  • 1 tsp ground coriander
  • 1 tsp ground cumin

Preparation

  1. Steam the edamame for 10 minutes until soft and preheat the oven to 180 degrees.

  2. Add all of the ingredients including the edamame to a food processor and pulse until combined.

  3. Roll into golf ball sized balls and cook for 25-30 minutes.

Serving suggestions

  1. Serve with fresh kale and spinach, blueberries, capsicum, and cucumber.

  2. Add a simple dressing made from honey, whole grain mustard, and lemon juice.
