Strawberry Bliss Pie Dessert

Ingredients

  • 3/4 cup strawberry jam
  • 750g fresh strawberries

Pie crust

  • 335g flour
  • 30g sugar
  • 165g butter
  • 105-110g iced water
  • Pinch of salt

Preparation

  1. Place flour, sugar and salt into a food processor and pulse a few times to combine.

  2. Add cold diced butter and pulse the mixture until coarse crumbs form with some pea-sized pieces then stop mixing.

  3. Add water and pulse just until moist clumps or small balls form.

  4. Transfer dough to a clean work surface and gather dough together into a ball but do not knead the dough.

  5. Divide dough into 2 portions, cover with plastic wrap and refrigerate for 30 minutes.

  6. Preheat oven to 210°C.

  7. Roll out the chilled pie dough and carefully place it into a pie pan.

  8. Spread the strawberry jam into the crust.

  9. Top with sliced strawberries.

  10. Roll out the remaining dough and cut it using a pastry hearts grid then carefully transfer and place it on top.

  11. Lightly brush the pie with milk and sprinkle the top with coarse sugar.

  12. Bake the pie at 210°C for 35-45 minutes or until golden brown.
