Vegan Almond Butter Cookies

Ingredients

  • 1/3c @traderjoes raw creamy almond butter
  • 1/4c coconut sugar
  • 3T @bobsredmill oat flour
  • 2T maple syrup
  • 3/4tsp baking powder
  • 1/8tsp sea salt
  • Handful of coconut flakes
  • 2-3T vegan @enjoylifefoods mini chocolate chips

Preparation

  1. Preheat oven to 350°F

  2. Start by mixing the almond butter and coconut sugar in a bowl, then stir in the rest of your ingredients to create your dough.

  3. Lastly, add in any yummy extra ingredients you want in the cookies: I chose coconut flakes and mini choc chips.

  4. Freeze for 5-10min to firm up.

  5. Roll into balls, place in a muffin tin, and bake for 6min @ 350°F; turn off the oven and leave them in for a few more min, then remove and sit for 5-10.
