Vegan Almond Butter Cookies
Ingredients
- 1/3c @traderjoes raw creamy almond butter
- 1/4c coconut sugar
- 3T @bobsredmill oat flour
- 2T maple syrup
- 3/4tsp baking powder
- 1/8tsp sea salt
- Handful of coconut flakes
- 2-3T vegan @enjoylifefoods mini chocolate chips
Preparation
Preheat oven to 350°F
Start by mixing the almond butter and coconut sugar in a bowl, then stir in the rest of your ingredients to create your dough.
Lastly, add in any yummy extra ingredients you want in the cookies: I chose coconut flakes and mini choc chips.
Freeze for 5-10min to firm up.
Roll into balls, place in a muffin tin, and bake for 6min @ 350°F; turn off the oven and leave them in for a few more min, then remove and sit for 5-10.
