Vegan Cranberry Muffins
Ingredients
- 2 cups whole wheat flour
- 1/2 cup of coconut sugar
- 2 tbsp flaxseed meal
- 1 tbsp baking powder
- 1 tsp salt
- 1 1/2 cups almond milk
- 1/2 cup coconut oil (melted)
- 1 tsp almond extract
- 1 cup fresh cranberries
- 2 tsp cornstarch (or arrowroot powder)
Preparation
Preheat oven to 350º f
Spray your baking pan with oil and set it aside
Use a small bowl and toss your cranberries with cornstarch
They should be properly dusted
Whisk the wet and dry ingredients in two separate bowls
Then mix them together in a larger bowl
Add cranberries into the mix
Pour the batter into the muffin pan
Bake for 25-30 mins or until the toothpick comes out clean
Let them cool before serving
