Vegan Cranberry Muffins

Ingredients

  • 2 cups whole wheat flour
  • 1/2 cup of coconut sugar
  • 2 tbsp flaxseed meal
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 1/2 cups almond milk
  • 1/2 cup coconut oil (melted)
  • 1 tsp almond extract
  • 1 cup fresh cranberries
  • 2 tsp cornstarch (or arrowroot powder)

Preparation

  1. Preheat oven to 350º f

  2. Spray your baking pan with oil and set it aside

  3. Use a small bowl and toss your cranberries with cornstarch

  4. They should be properly dusted

  5. Whisk the wet and dry ingredients in two separate bowls

  6. Then mix them together in a larger bowl

  7. Add cranberries into the mix

  8. Pour the batter into the muffin pan

  9. Bake for 25-30 mins or until the toothpick comes out clean

  10. Let them cool before serving
