Gluten Free Vegan Cauliflower Fudge Brownies

Ingredients

  • • 350 g cauliflower florets, steamed or boiled until tender
  • • 225 g (8oz) vegan (dark) chocolate
  • • 1/4 cup coconut oil
  • • 1 tsp espresso powder
  • • 1 tsp vanilla extract
  • • 1/2 cup coconut sugar
  • • 1/2 cup applesauce
  • • 2/3 cup cocoa powder
  • • 1/4 tsp salt
  • • 1/2 tsp baking powder
  • • 120 g spelt flour/ gluten free oat flour

Preparation

  1. Mix together spelt flour, cocoa powder, baking powder, and salt in a large bowl, set aside

  2. Melt chocolate, coconut oil, and espresso powder together in a double boiler or use a microwave

  3. Add cooked cauliflower, sugar, applesauce, vanilla, and melted chocolate mixture in a blender and blend until smooth. There mustn’t be any lumps left

  4. Add the cauliflower-chocolate mixture to the dry ingredient bowl and mix just until there are no clumps of flour in the bowl. DO NOT over mix the batter or your brownies will come out chewy and tough

  5. Transfer batter to a baking tin. This recipe is perfect for a 7 1/2 inch tin

  6. Bake at 300 for about 25-30 minutes or until it’s thoroughly cooked. Be patient. Check the inside by inserting a toothpick to see if it’s cooked all the way through. Once the toothpick comes out clean, it’s ready

  7. Leave the brownies to cool before cutting into squares

  8. Serve warm or cold with fresh fruits, vegan chocolate syrup, vegan caramel sauce, or vegan whipped cream
