Vegan Oatmeal Cinnamon Cookies

Ingredients

  • 1 cup all purpose flour or gluten-free all purpose blend
  • 1/2 cup oatmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/3 cup raw unrefined sugar
  • 1/4 cup raisins
  • 1/4 cup chopped pitted dates, I used deglet nor
  • 1/4 cup canola oil or melted coconut oil
  • 1/4 cup maple syrup
  • 1 1/2 teaspoons vanilla extract

Preparation

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper

  2. In a medium bowl mix flour, oats, baking powder, baking soda, cinnamon and sugar, add raisins and chopped dates and toss well, coating each piece of dried fruit with dry ingredients so they do not stick together and set aside

  3. In a small bowl whisk oil, maple syrup and vanilla

  4. Pour into bowl of dry ingredients and mix well

  5. Using a cookie scoop or Tablespoons, form heaping tablespoons of batter into cookies and space evenly on your prepared cookie sheet

  6. Bake for 10-12 minutes, removing from oven when they begin to brown

  7. Cool and enjoy, so good with a glass of vanilla almond milk
