Vegan Shepherds Pie
Ingredients
- 1 can green lentils
- 5 white mushrooms
- 7 white potatoes
- 1 cup frozen veggie mix
- 2 tsp better then bullion
- 1 cup water
- garlic powder, onion powder, salt, pepper
- vegan butter - Mykonos is the best
Preparation
Drain and rinse lentils, add to a large sauce pan, add finely chopped up mushrooms, frozen veggies, add spices, veg Bolluin, water and stir till well combined. Cover with lid and cook on medium low heat
Peel and chop up potatoes, add to a cold pot of water then place on stove to boil. Let it boil till the potatoes are soft and fork tender. Drain water, add vegan butter, salt, and mash them up till soft n fluffy
The veg mix should be almost done, take the lid off and turn heat to high and let most of the liquid get absorbed. So it’s a thicker mix rather then too thin n liquid
Add the veg mix to a oven safe dish, I used an 8x8 dish. Then add the layer of potatoes on top. Bake for 15 minutes and for the last 5 broil the top so it gets extra crispy
Take out of the oven and let it cool for a bit before taking out a section. So it doesn’t fall apart lol aka what I did and why mine is a mess on the plate ha
