Walnut Cinnamon Cake with Cheese Sauce
Ingredients
Filling
- 1/2 cup chopped walnuts
- 1/2 cup light brown sugar
- 2 tablespoons cinnamon
Cake mixture
- 3 cups flour
- 1/8 teaspoon salt
- 1 tablespoon baking powder
- 1/2 cup butter, softened
- 1/2 cup corn oil
- 2 cups fine granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup whole milk
Cheese sauce
- 4 ounces cream cheese
- 1/4 cup sweetened condensed milk
- 1/4 teaspoon vanilla extract
Preparation
Adjust the middle rack in the oven and preheat the oven to 180°C.
Use a round bundt pan, grease it with vegetable shortening or butter, dust with flour, and set aside.
For the filling, in a bowl, place the walnuts, sugar, and cinnamon, and mix well.
For the cake mixture, in a suitable bowl or on paper, sift the flour, salt, and baking powder, and set aside.
In the mixer bowl, place the butter, oil, and sugar, attach the whisk, and mix on medium speed until creamy.
Add the eggs gradually, one at a time, while continuing to mix until incorporated, then add the vanilla.
Add half the flour mixture and half the milk, mix on low speed until the flour disappears, then add the remaining milk and flour.
Mix on medium speed for 1 minute until smooth.
Pour half the batter into the pan, spread one-third of the walnut mixture, then add the remaining batter and one-third of the walnuts on top, reserving the rest for garnish.
Bake for 50 minutes and test for doneness.
Remove the pan from the oven, let it cool on a wire rack for a few minutes, then remove the cake from the pan.
For the cheese sauce, in a bowl, place the cream cheese, condensed milk, and vanilla, mix until smooth, add the remaining walnuts, and spread over the cake.
