Simple Everyday Almond Cake

Ingredients

  • 2 cups flour
  • a pinch of salt
  • 1 tablespoon baking powder
  • 2 tablespoons cornstarch
  • 3 large eggs
  • 1 cup fine-grained sugar
  • 1 teaspoon vanilla extract
  • 2/3 cup corn oil
  • 1/2 cup yogurt
  • 1/2 cup orange juice or milk
  • almonds (quantity not specified)

Preparation

  1. Adjust the oven rack to the middle position and preheat the oven to 180°C.

  2. Grease a tube pan generously with butter and sprinkle almonds to cover all sides, then set aside.

  3. Sift together the flour, salt, baking powder, and cornstarch, then set aside.

  4. In a bowl, combine eggs and sugar, and beat with an electric mixer for a few minutes until light-colored and cohesive.

  5. Gradually add the oil while continuing to beat until fully incorporated.

  6. Add the yogurt and continue beating until fully incorporated.

  7. Add the orange juice and continue beating until fully incorporated.

  8. Add the flour mixture and continue beating until fully incorporated, then pour the batter into the prepared pan.

  9. Sprinkle some almonds on the surface of the batter.

  10. Bake the cake for 40 minutes or until golden brown.

  11. Remove the cake from the pan and let it cool completely on a wire rack before serving.
