Zucchini Banana Bread Cookies

Ingredients

Dry

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1 tablespoon cinnamon
  • 1 tablespoon baking powder
  • 1/4 teaspoon Himalayan pink salt

Wet

  • 2 eggs
  • 2 small mashed bananas

Additions

  • 1/2 cup shredded zucchini

Preparation

  1. Preheat oven to 350 degrees Fahrenheit

  2. In a medium-sized bowl, stir together the dry ingredients

  3. In a small bowl, whisk together the wet ingredients

  4. Pour the wet ingredients into the dry ingredients and stir until combined

  5. Stir in the shredded zucchini

  6. Scoop out cookies with an ice-cream scoop and bake for 13 minutes
