Zucchini Banana Bread Cookies
Ingredients
Dry
- 1 cup almond flour
- 1/4 cup coconut flour
- 1 tablespoon cinnamon
- 1 tablespoon baking powder
- 1/4 teaspoon Himalayan pink salt
Wet
- 2 eggs
- 2 small mashed bananas
Additions
- 1/2 cup shredded zucchini
Preparation
Preheat oven to 350 degrees Fahrenheit
In a medium-sized bowl, stir together the dry ingredients
In a small bowl, whisk together the wet ingredients
Pour the wet ingredients into the dry ingredients and stir until combined
Stir in the shredded zucchini
Scoop out cookies with an ice-cream scoop and bake for 13 minutes
