Easy Aachari Grilled Vegetable Medley
Ingredients
- store bought Indian pickle
- zucchini sliced to 1 cm
- squash sliced to 1 cm
- bell peppers sliced to 1 cm
- broccoli sliced to 1 cm
- olive oil
- salt
- pepper
- coriander leaves
Preparation
Purée the Indian pickle to a fine paste.
Marinate the 1 cm sliced zucchini, squash, bell peppers, and broccoli with the pickle paste, olive oil, salt, and pepper.
Grill the marinated vegetables on a hot griddle until perfected.
Serve warm garnished with finely shredded coriander leaves.
