Easy Aachari Grilled Vegetable Medley

Ingredients

  • store bought Indian pickle
  • zucchini sliced to 1 cm
  • squash sliced to 1 cm
  • bell peppers sliced to 1 cm
  • broccoli sliced to 1 cm
  • olive oil
  • salt
  • pepper
  • coriander leaves

Preparation

  1. Purée the Indian pickle to a fine paste.

  2. Marinate the 1 cm sliced zucchini, squash, bell peppers, and broccoli with the pickle paste, olive oil, salt, and pepper.

  3. Grill the marinated vegetables on a hot griddle until perfected.

  4. Serve warm garnished with finely shredded coriander leaves.
