Easy Cheesy Chickpea Flour Omelette
Ingredients
- 1/4 cup chickpea flour
- 1/4 + 1/8 cup almond milk
- 1 tbsp nutritional yeast
- 1/2 tbsp flax seed
- 1/2 tsp apple cider vinegar
- 1/8 tsp bicarbonate of soda
- 1/8 tsp garlic powder
- 1/8 tsp onion powder
- 1/4 tsp turmeric
Preparation
Whisk together the ingredients and let the batter sit.
Cook any fillings such as mushrooms or vegetables and grate cheese of your choice.
On medium heat, pour the batter into a frying pan and swirl to cover the base like a pancake, cook for 2-3 minutes until bubbles form and it turns golden brown on one side.
Flip over and cook the other side for a further 1-2 minutes until golden.
Place the fillings on half of it and fold over the other half, place a lid on the pan and leave to sit for 5 minutes.
