Fluffy Tofu Omelette with Veggies and Spices

Ingredients

  • 1/2 block tofu
  • 4 tbsp chickpea flour
  • 1 tbsp cornstarch
  • 1 tbsp nutritional yeast
  • Some plant milk
  • Spices like black salt, pepper, smoked paprika, garlic powder
  • Veggies of choice (I used corn and onion)

Preparation

  1. Blend all the ingredients except the veggies.

  2. Mix in your veggies.

  3. Fry the omelette on a non-stick pan on both sides.

  4. Serve with greens, guacamole, and homemade sauerkraut to enjoy.
