Gingerbread Blender Ice Cream

Ingredients

  • 4-5 frozen bananas
  • 2 tablespoons molasses
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • Gingerbread cookies, crumbled

Preparation

  1. Blend everything except the cookies in a high speed blender or food processor until creamy and smooth.

  2. Add half of the cookie crumbles and blend briefly to combine.

  3. Spread the mixture into a shallow pan or dish.

  4. Sprinkle more cookie crumbles on top.

  5. Freeze for at least 2 hours.

  6. Scoop into bowls, top with more cookies, and enjoy.
