Vegan Carrot Cake Chia Pudding

Ingredients

  • 1 cup coconut milk
  • 1/3 cup chia seeds
  • 1/3 cup hemp seeds
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp cardamom

Toppings

  • 1/3 cup shredded carrots
  • 2 tbsp raisins
  • 2 tbsp pecan butter
  • Optional: candied pecans or regular pecans or walnuts

Preparation

  1. Add all ingredients except carrots, raisins, and pecan butter to a blender and blend.

  2. Layer the pudding with carrots, raisins, and pecan butter in mason jars, repeating the layers until the jar is full.

  3. Top with candied pecans or a substitute like regular pecans or walnuts.
