Vegan Carrot Cake Chia Pudding
Ingredients
- 1 cup coconut milk
- 1/3 cup chia seeds
- 1/3 cup hemp seeds
- 1 tsp vanilla extract
- 1 tbsp maple syrup
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ginger
- 1/4 tsp cardamom
Toppings
- 1/3 cup shredded carrots
- 2 tbsp raisins
- 2 tbsp pecan butter
- Optional: candied pecans or regular pecans or walnuts
Preparation
Add all ingredients except carrots, raisins, and pecan butter to a blender and blend.
Layer the pudding with carrots, raisins, and pecan butter in mason jars, repeating the layers until the jar is full.
Top with candied pecans or a substitute like regular pecans or walnuts.
