Vegan Cashew Cheese Sauce
Ingredients
- 1/2 cup raw cashews, soaked
- 1 tablespoon water from cashews
- juice from 1/2 lemon
- 1/2 teaspoon apple cider vinegar
- 1/2 cup non dairy milk
- 1 teaspoon tomato paste
- 1 tablespoon red miso paste
- 1/2 teaspoon dijon mustard
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/8 teaspoon white pepper
- 1 - 1 1/2 tablespoons vegan sour cream
- 1/4 teaspoon turmeric
- 1/8 teaspoon paprika
- 1/4 cup nutritional yeast
- salt to taste (I used 1/8 teaspoon)
- 1 - 2 tablespoons melted vegan butter
Preparation
Soak cashews for at least 4 hours or overnight, or boil cashews until they are soft. Keep 1 tablespoon of cashew water and drain the remaining water.
Combine all ingredients in a high powered blender or food processor. Blend until sauce is creamy and thick. Taste to see if you need to add anything additional.
Serve over your favorite pasta.
