Vegan Cashew Cheese Sauce

Ingredients

  • 1/2 cup raw cashews, soaked
  • 1 tablespoon water from cashews
  • juice from 1/2 lemon
  • 1/2 teaspoon apple cider vinegar
  • 1/2 cup non dairy milk
  • 1 teaspoon tomato paste
  • 1 tablespoon red miso paste
  • 1/2 teaspoon dijon mustard
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/8 teaspoon white pepper
  • 1 - 1 1/2 tablespoons vegan sour cream
  • 1/4 teaspoon turmeric
  • 1/8 teaspoon paprika
  • 1/4 cup nutritional yeast
  • salt to taste (I used 1/8 teaspoon)
  • 1 - 2 tablespoons melted vegan butter

Preparation

  1. Soak cashews for at least 4 hours or overnight, or boil cashews until they are soft. Keep 1 tablespoon of cashew water and drain the remaining water.

  2. Combine all ingredients in a high powered blender or food processor. Blend until sauce is creamy and thick. Taste to see if you need to add anything additional.

  3. Serve over your favorite pasta.
