Pasta with Homemade Broccoli Pesto and Lashings of Parmesan

Ingredients

  • 250g pasta of choice
  • 1/2 head of broccoli, finely grated
  • 150ml olive oil
  • 1 clove garlic, crushed
  • 1/2 cup ground almonds
  • handful fresh mint and basil, finely chopped
  • 1/2 cup parmesan, grated
  • Put pasta on to cook as per packet instructions

Preparation

  1. Whilst it’s cooking, finely grate the broccoli

  2. Warm a non stick pan on a medium heat then add the oil, garlic, lemon and almond and cook for a minute

  3. Add the broccoli to the pan and fry for a few minutes stirring regularly

  4. Stir through the mint, basil and parmesan

  5. Drain the pasta, reserving a little water, then add it to the pesto pan and stir through
