Pasta with Homemade Broccoli Pesto and Lashings of Parmesan
Ingredients
- 250g pasta of choice
- 1/2 head of broccoli, finely grated
- 150ml olive oil
- 1 clove garlic, crushed
- 1/2 cup ground almonds
- handful fresh mint and basil, finely chopped
- 1/2 cup parmesan, grated
- Put pasta on to cook as per packet instructions
Preparation
Whilst it’s cooking, finely grate the broccoli
Warm a non stick pan on a medium heat then add the oil, garlic, lemon and almond and cook for a minute
Add the broccoli to the pan and fry for a few minutes stirring regularly
Stir through the mint, basil and parmesan
Drain the pasta, reserving a little water, then add it to the pesto pan and stir through
