Broccoli Garlic Pasta with Lemon and Cheese

Ingredients

  • pasta (cook according to package directions)
  • 1 small head of broccoli
  • olive oil (for sautéing)
  • 4 minced garlic cloves
  • 1 teaspoon chili flakes
  • salt and pepper (to taste)
  • 1.5 cups vegetable broth
  • 1/2 cup shredded pecorino cheese
  • 2 tablespoons freshly squeezed lemon juice

Preparation

  1. Use fresh or frozen broccoli for this recipe.

  2. Cook pasta according to package directions; smaller noodles work best.

  3. Finely chop 1 small head of broccoli.

  4. Sauté the chopped broccoli in olive oil for 6 minutes.

  5. Add 4 minced garlic cloves, 1 teaspoon chili flakes, salt, and pepper; cook for 2 more minutes.

  6. Add 1.5 cups vegetable broth and bring to a simmer.

  7. Once the sauce starts to thicken, stir in the cooked pasta, 1/2 cup shredded pecorino cheese, and 2 tablespoons freshly squeezed lemon juice.

  8. Serve with extra pecorino cheese and black pepper.
