Broccoli Garlic Pasta with Lemon and Cheese
Ingredients
- pasta (cook according to package directions)
- 1 small head of broccoli
- olive oil (for sautéing)
- 4 minced garlic cloves
- 1 teaspoon chili flakes
- salt and pepper (to taste)
- 1.5 cups vegetable broth
- 1/2 cup shredded pecorino cheese
- 2 tablespoons freshly squeezed lemon juice
Preparation
Use fresh or frozen broccoli for this recipe.
Cook pasta according to package directions; smaller noodles work best.
Finely chop 1 small head of broccoli.
Sauté the chopped broccoli in olive oil for 6 minutes.
Add 4 minced garlic cloves, 1 teaspoon chili flakes, salt, and pepper; cook for 2 more minutes.
Add 1.5 cups vegetable broth and bring to a simmer.
Once the sauce starts to thicken, stir in the cooked pasta, 1/2 cup shredded pecorino cheese, and 2 tablespoons freshly squeezed lemon juice.
Serve with extra pecorino cheese and black pepper.
