Homemade Spinach Pesto with Cashews and Basil

Ingredients

  • 2 cups raw spinach
  • 2 handfuls cashew nuts
  • 1 cup basil leaves
  • 3 tbsp Parmesan
  • 1/2 cup olive oil
  • 1 tsp garlic
  • 1 cup water

Preparation

  1. Blitz all ingredients in a Nutribullet.

Tips

  1. Can be stored in the fridge for up to a week.

  2. Add green chillies for extra spice and mix with pasta and roasted mushrooms.
