Nut Free Pesto
Ingredients
- 1 cup packed basil leaves
- 1 cup packed spinach leaves
- 1 garlic clove, chopped
- 1/2 cup olive oil
- 1 cup Parmesan
Preparation
Put all the ingredients in a food processor and blitz till well combined. If you like it smoother blitz it for a little longer
Recipe tip: if you want it a little looser add a couple tablespoons of water
Note: when I say “packed” I mean squeeze the basil and spinach leaves right into the cup to make sure it’s completely full
