Nut Free Pesto

Ingredients

  • 1 cup packed basil leaves
  • 1 cup packed spinach leaves
  • 1 garlic clove, chopped
  • 1/2 cup olive oil
  • 1 cup Parmesan

Preparation

  1. Put all the ingredients in a food processor and blitz till well combined. If you like it smoother blitz it for a little longer

  2. Recipe tip: if you want it a little looser add a couple tablespoons of water

  3. Note: when I say “packed” I mean squeeze the basil and spinach leaves right into the cup to make sure it’s completely full
