Wild Garlic Pesto with Gluten-Free Oat Pasta

Ingredients

  • 3-4 handfuls wild garlic
  • 1 cup pine nuts
  • 1 cup chopped Parmesan
  • Zest and juice of 1 lemon
  • 1/4 cup olive oil
  • Salt and pepper
  • 1 pack gluten-free oat pasta

Preparation

  1. Cook the gluten-free oat pasta according to the package instructions.

  2. While the pasta is cooking, prepare the pesto. In a blender, combine the wild garlic, pine nuts, chopped Parmesan, lemon juice, and zest.

  3. Blend the mixture until smooth, adding a couple of tablespoons of the pasta water to reach the desired texture. Taste and adjust the seasoning with salt and pepper.

  4. Once the pasta is cooked, drain it and return it to the pot.

  5. Stir the prepared wild garlic pesto into the cooked pasta until well combined.

  6. Serve the wild garlic pesto oat pasta and enjoy!
