Simple Spaghetti Pomodoro with Fresh Basil

Ingredients

  • Spaghetti
  • 1 28 oz can whole tomatoes
  • 4 garlic cloves
  • Fresh basil
  • Parmesan
  • 3 tbsp olive oil

Preparation

  1. Smash garlic and sauté in 3 tbsp olive oil for 3 minutes.

  2. Strain tomatoes and break them down by hand, saving the liquid.

  3. Add the solid part of tomatoes to the pot and cook, breaking them down, for 10 minutes.

  4. Add the liquid part of tomatoes and a handful of basil leaves; simmer for 10 minutes.

  5. Cook spaghetti al dente and reserve 1/2 cup pasta water.

  6. Add cooked spaghetti and reserved pasta water to the sauce, toss vigorously with tongs until well incorporated.

  7. Fold in 3/4 cup Parmesan cheese and continue tossing.

  8. Serve with cracked black pepper and chili flakes.
