Sweet Potato Toast with Pesto

Ingredients

  • Sweet potato
  • 1 cup fresh basil leaves
  • 2 cups baby spinach leaves
  • 1/3 cup olive oil
  • 1/2 cup Parmesan or 1/3 cup nutritional yeast
  • 1/2 cup cashew nuts
  • 1/2 teaspoon chopped garlic
  • Pinch of salt and black pepper
  • Water or almond milk as needed

Preparation

  1. Slice the sweet potato as thinly as possible.

  2. Toast the slices in a toaster on low-medium setting for 6-8 minutes until they start browning.

  3. While the sweet potato is toasting, prepare the pesto by blending all the pesto ingredients in a blender until smooth.

  4. Spread the pesto over the toasted sweet potato slices
