Sweet Potato Toast with Pesto
Ingredients
- Sweet potato
- 1 cup fresh basil leaves
- 2 cups baby spinach leaves
- 1/3 cup olive oil
- 1/2 cup Parmesan or 1/3 cup nutritional yeast
- 1/2 cup cashew nuts
- 1/2 teaspoon chopped garlic
- Pinch of salt and black pepper
- Water or almond milk as needed
Preparation
Slice the sweet potato as thinly as possible.
Toast the slices in a toaster on low-medium setting for 6-8 minutes until they start browning.
While the sweet potato is toasting, prepare the pesto by blending all the pesto ingredients in a blender until smooth.
Spread the pesto over the toasted sweet potato slices
