Chive Pesto with Spaghetti and Courgetti
Ingredients
- Large handful cashew nuts
- Large handful chives
- 1-2 cloves garlic
- Large chunk Parmesan (vegan alternative: nutritional yeast)
- Drizzle of EVOO
- Salt to taste
Preparation
Blend all ingredients to a smooth paste.
Enjoy with wholewheat spaghetti or courgetti.
