Quick Pea Pesto Pasta with Parmesan and Mint

Ingredients

  • 500g pasta
  • 2 1/2 cups peas
  • 1/2 cup toasted pine nuts
  • 1 cup basil leaves
  • 1 cup grated Parmesan
  • 1 clove garlic, chopped
  • 1/4 cup mint leaves
  • 1/2 cup water
  • 1 tsp salt
  • squeeze of lemon

Preparation

  1. Cook the pasta according to pack instructions.

  2. Put all remaining ingredients in a food processor and blitz together till smooth. (Reserve a few peas, pine nuts, and Parmesan for garnish.)

  3. If the mixture is too thick, add a little pasta water.

  4. Taste and season.

  5. Stir through the pasta and enjoy.
