Quick Pea Pesto Pasta with Parmesan and Mint
Ingredients
- 500g pasta
- 2 1/2 cups peas
- 1/2 cup toasted pine nuts
- 1 cup basil leaves
- 1 cup grated Parmesan
- 1 clove garlic, chopped
- 1/4 cup mint leaves
- 1/2 cup water
- 1 tsp salt
- squeeze of lemon
Preparation
Cook the pasta according to pack instructions.
Put all remaining ingredients in a food processor and blitz together till smooth. (Reserve a few peas, pine nuts, and Parmesan for garnish.)
If the mixture is too thick, add a little pasta water.
Taste and season.
Stir through the pasta and enjoy.
