Vegan Pesto Pea Pasta Dish

Ingredients

  • 16 oz of your favorite pasta
  • 1 cup peas
  • 4 cups fresh basil
  • 1 tbsp minced garlic
  • 1/4 cup walnuts
  • 1 small lemon, juice
  • 1/8 cup pepita seeds
  • 3/4 cup peas
  • 3 tbsp nutritional yeast
  • 1 tbsp olive oil
  • 1/4 cup plain coconut yogurt
  • 1/4 cup water
  • Salt and pepper to taste

Preparation

  1. You will need: blender, large pot, drainer.

  2. Fill pot about halfway with water and put on high heat until it begins to boil. Add pasta and turn down to a simmer. Cook for about 9-12 minutes depending on instructions on box.

  3. While pasta is cooking, add all the pesto sauce ingredients to a blender and blend until smooth.

  4. Drain pasta.

  5. Add pesto sauce to pot on low heat. Add pasta to sauce and mix well until evenly coated with sauce.

  6. Optionally, add about 1 cup whole peas for more protein and texture.
