Vegan Pesto Pea Pasta Dish
Ingredients
- 16 oz of your favorite pasta
- 1 cup peas
- 4 cups fresh basil
- 1 tbsp minced garlic
- 1/4 cup walnuts
- 1 small lemon, juice
- 1/8 cup pepita seeds
- 3/4 cup peas
- 3 tbsp nutritional yeast
- 1 tbsp olive oil
- 1/4 cup plain coconut yogurt
- 1/4 cup water
- Salt and pepper to taste
Preparation
You will need: blender, large pot, drainer.
Fill pot about halfway with water and put on high heat until it begins to boil. Add pasta and turn down to a simmer. Cook for about 9-12 minutes depending on instructions on box.
While pasta is cooking, add all the pesto sauce ingredients to a blender and blend until smooth.
Drain pasta.
Add pesto sauce to pot on low heat. Add pasta to sauce and mix well until evenly coated with sauce.
Optionally, add about 1 cup whole peas for more protein and texture.
