Sweet Chickpea Lentil Curry
Ingredients
- 1 15 oz can chickpeas, rinsed and drained
- 1/4 cup dry green lentils, rinsed well
- 1 15 oz can fire roasted tomatoes
- 1 small red onion, diced
- 1 inch knob of ginger, minced
- 3 garlic cloves, minced
- 1 small sweet potato, cubed
- 1/2 tsp cumin
- 1/2 tsp coriander
- 1/2 tsp turmeric
- 1/4 tsp ground fennel
- Pinch of cinnamon
- Pinch of cardamom
- Pinch of ground clove
- Few cracks of fresh ground pepper
- 1 15 oz can light coconut milk or 1 1/2 cups unsweetened almond milk
- 1 cup veggie broth or water ✨
Preparation
Add onions to a medium sized pot and sauté until softened
Add in garlic and ginger and continue to sauté until fragrant
Add in remaining seasonings and cook with a splash of water for 1-2 minutes until fragrant
Add in remaining ingredients and stir to fully combine
Bring to a boil then reduce to a low simmer and cover
Allow to cook for 15 minutes, stir and recover then cook for an additional 10 minutes or until lentils are fully cooked and tender
Feel free to add more cooking liquid if you wish for curry to be thinner
Serve as desired
