Harissa Black Beans
Ingredients
- 2 cans black beans, rinsed and drained
- 1 medium sweet potato cut into large chunks
- 3 cloves garlic
- 1/2 red onion
- 2 tbsp harissa seasoning
- 1 tsp cinnamon
- 2 tsp cumin
- 1/4 tsp of salt (additional to taste)
- 1 can fire roasted tomatoes + use same tin to measure equal parts water
Preparation
In a large sauce pan add onion and sauté until softened
Add in garlic, sauté until fragrant, 2 minutes
Add all seasonings and continue to sauté until cinnamon becomes fragrant
Add tomatoes, beans, sweet potato and water
Bring to a boil then reduce to a simmer
Cook, stirring on occasion, for 25 to 30 minutes or until thickened to your preference
Serve with extra veggies and starch
