Harissa Black Beans

Ingredients

  • 2 cans black beans, rinsed and drained
  • 1 medium sweet potato cut into large chunks
  • 3 cloves garlic
  • 1/2 red onion
  • 2 tbsp harissa seasoning
  • 1 tsp cinnamon
  • 2 tsp cumin
  • 1/4 tsp of salt (additional to taste)
  • 1 can fire roasted tomatoes + use same tin to measure equal parts water

Preparation

  1. In a large sauce pan add onion and sauté until softened

  2. Add in garlic, sauté until fragrant, 2 minutes

  3. Add all seasonings and continue to sauté until cinnamon becomes fragrant

  4. Add tomatoes, beans, sweet potato and water

  5. Bring to a boil then reduce to a simmer

  6. Cook, stirring on occasion, for 25 to 30 minutes or until thickened to your preference

  7. Serve with extra veggies and starch
