BBQ Chicken and Pineapple Quesadillas
Ingredients
- 1 chicken breast
- 1/2 cup BBQ sauce (recommend with a little heat)
- 1 bell pepper
- 1 jalapeño
- 1/2 cup diced pineapple
- 1 cup shredded cheese
- Tortilla shells
Preparation
Marinate chicken in BBQ sauce for an hour, grill on the BBQ until cooked through, let cool and dice.
Slice red peppers, jalapeños and pineapple; optionally sauté them for 4 minutes in a skillet.
Spread cheese on half a tortilla, top with chicken, peppers and pineapple, add more cheese and fold.
Heat a skillet, add the folded quesadilla; optionally sprinkle with paprika, and cook on both sides for 3 minutes until cheese has melted.
Cut into three parts and serve with salsa.
