BBQ Chicken and Pineapple Quesadillas

Ingredients

  • 1 chicken breast
  • 1/2 cup BBQ sauce (recommend with a little heat)
  • 1 bell pepper
  • 1 jalapeño
  • 1/2 cup diced pineapple
  • 1 cup shredded cheese
  • Tortilla shells

Preparation

  1. Marinate chicken in BBQ sauce for an hour, grill on the BBQ until cooked through, let cool and dice.

  2. Slice red peppers, jalapeños and pineapple; optionally sauté them for 4 minutes in a skillet.

  3. Spread cheese on half a tortilla, top with chicken, peppers and pineapple, add more cheese and fold.

  4. Heat a skillet, add the folded quesadilla; optionally sprinkle with paprika, and cook on both sides for 3 minutes until cheese has melted.

  5. Cut into three parts and serve with salsa.
