Crunchy Baked Tacos with Cheese and Fresh Toppings

Ingredients

  • 1/2 onion
  • ground beef or turkey
  • 1 tablespoon chili seasoning
  • 1 tablespoon tomato paste
  • a few splashes of broth
  • tortilla shells
  • cheese
  • diced tomato
  • jalapeño
  • avocado
  • cilantro
  • salsa
  • guacamole

Preparation

  1. Sauté 1/2 onion and ground beef or turkey until browned, then drain excess grease.

  2. Add 1 tablespoon chili seasoning, 1 tablespoon tomato paste, and a few splashes of broth; stir and simmer for a few minutes.

  3. Heat tortilla shells one at a time until they bubble.

  4. Stuff each tortilla with the taco mixture and sprinkle with cheese.

  5. Fold the tortillas and bake at 400°F for 10 minutes.

  6. Gently open and top with diced tomato, jalapeño, avocado, and cilantro.

  7. Optionally dip into salsa and guacamole, and enjoy with a margarita.
