Tasty Plantain Nachos with a Healthy Twist

Ingredients

  • plantain chips
  • ground chicken or turkey
  • taco seasoning
  • black beans
  • bell pepper
  • tomatoes
  • diced red onion
  • sliced green onion
  • cheese
  • cilantro

Preparation

  1. Cook ground chicken or turkey in a skillet and mix with taco seasoning of choice.

  2. Layer chips on a plate then top with meat, black beans, bell pepper, tomatoes, diced red onion, sliced green onion, cheese, and cilantro or whatever toppings you please.

  3. Microwave for 30 seconds or so to melt the cheese or do step 2 on a baking sheet and bake in the oven for a couple of minutes.
