Quinoa Taco Stuffed Zucchini Boats
Ingredients
- 4 zucchini
- 1 cup quinoa
- 2 tbsp taco seasoning
- 1/2 cup corn
- 1/2 cup black beans
- 1/2 cup cheese
- 1 tbsp olive oil
- 1/2 onion
- 1/2 pepper
Preparation
Cook quinoa according to package instructions. Once almost done, stir in 2 tbsp taco seasoning and let it soak in.
Preheat oven to 400°F.
Slice zucchini in half and use a spoon to scoop out the middle.
Grease a casserole dish and add the zucchini into it and set aside.
Heat a skillet over medium heat.
Add olive oil.
Dice the onion and pepper then add to the skillet.
Sauté 5-7 minutes, until they’re soft.
Then add in cooked quinoa and mix together.
Add quinoa to the zucchini boats.
Add corn and beans on top.
Sprinkle with cheese.
Bake for 25 minutes at 400°F, broil at the end for 2 minutes.
