Baked Seasoned Fish Tacos with Fresh Toppings

Ingredients

  • cod
  • taco seasoning
  • taco shells
  • shredded lettuce
  • diced tomatoes
  • diced red onion
  • black beans
  • corn
  • shredded cheese
  • zucchini

Preparation

  1. Season the cod with taco seasoning and bake at 400°F for 12 minutes until flaky.

  2. Break the fish apart and add to taco shells. Top with shredded lettuce, diced tomatoes, diced red onion, black beans, corn, and shredded cheese.

  3. Roast zucchini in the oven at 400°F for 12 minutes as a side.
